Chocolate Chip Banana Oatmeal Bars Recipe
Ingredients
- 1 cup Old Fashioned Rolled Oats
- 3/4 cup Oat Flour
- 3/4 cup Whole Wheat Flour
- 1 teaspoon Baking Soda
- 1 teaspoon Cinnamon
- 1/4 teaspoon Salt
- 1/4 cup Brown Sugar, lightly packed
- 3 Bananas, mashed
- 1 teaspoon Pure Vanilla Extract
- 1/4 cup Buttermilk
- 1/2-3/4 cup Semisweet Chocolate Chips, (or raisins)
Directions
- Preheat the oven to 350°F.
- Line an 8x8 inch baking dish with parchment paper or aluminum foil, spray it with non-stick cooking spray, and set aside.
- In a large bowl, whisk together the oats, oat flour, whole wheat flour, baking soda, cinnamon, salt, and brown sugar.
- Add the mashed bananas, vanilla, and buttermilk and stir well.
- Fold in the chocolate chips.
- Spread the batter into the prepared baking dish.
- Bake for 28-32 minutes, or until a toothpick inserted in the center comes out clean, and the bars are golden brown.
- Allow the bars to cool completely in the pan, then lift out the parchment paper and slice into bars.
Notes
- Store the bars in an airtight container at room temperature for up to 5 days.
